In 2000 the Espelette pepper got the French A.O.C. label (Appellation d’Origine Contrôlée) which recognizes the specificity of this territory soil. In 2002 it also got rewarded by being a P.D.O. (Protected Designation of Origin) by the European Union. This Espelette pepper is known as being very fragile and can only grow properly under this very specific micro-climate of Southwestern France, North of the Basque area. Only a specific quantity is produced every year in accordance with knowledge passed down through generations: it is very carefully cultivated and then harvested.
Espelette pepper has a spiciness that is characterized by a warm depth of flavor with a nice little kick, spicy but subtle. It is the finest and most refined of the chili peppers.
